Beans Salad with Bottarga
This Mediterranean White Bean Salad couldn't be easier or pack more flavor. Just 15 minutes gets you a hearty and delicious side dish!
INGREDIENTS (4 servings)
• 4oz Bottarga
• 2 14oz cans of Cannellini beans
• zest of 1 lemon
• 1/4 cup chopped parsley
• 2 tbsp freshly squeezed lemon juice
• 5 tbsp Sogno di Liguria extra virgin oil
• Salt and pepper to taste
- Start by making the dressing. In a large mixing bowl, combine extra virgin olive oil, fresh lemon juice, lemon zest, salt, and pepper.
- Whisk that together well, then add rinsed and drained canned Cannellini beans and chopped parsley.
- Plate up the salad and grate 1/2 oz. bottarga on top of each serving.
