Crispy, fragrant and fresh, these breaded asparagus are perfect for the first spring aperitifs. If you want you can even put them in the salad for a refined and quick lunch.


  1. Clean the asparagus and blanch them for 30 seconds in salted boiling water then pass them under cold water.
  2. Finely chop the almonds, mix with the Parmesan and the breadcrumbs.
  3. Beat the egg white with a fork, pass the asparagus one by one in the beaten egg white and then in the chopped almonds, making them adhere well.
  4. Heat a drizzle of olive oil in a non-stick pan and sauté the asparagus over medium heat until golden brown.
  5. Serve warm.
