Purple Spaghetti

Spaghetti with purple cabbage is a fast first course with a very bright color. Responsible for this wonderful color are anthocyanins, molecules that color fruits such as blueberries and grapes, vegetables such as red Tropea onion. They are important antioxidants for our health, which is why a portion of purple foods should never be missing in our diet. The color of this pasta remains unchanged even after cooking. Red cabbage changes color in some dishes but only by varying acidity and alkalinity. For example, if we combine the juice of a lemon with that of red cabbage, the liquid will turn blue (increased acidity); on the contrary, adding an alkaline element will turn red.

INGREDIENTS:

Adoro Spaghetti 6 oz

● Purple cabbage 9 oz

● Garlic 1 clove

● Walnuts 8

Olive oil 5 tbsp

Ricotta 3 oz

Parmesan ⅛ cup

● Salt to taste

● Black pepper to taste


PREPARATION:

1. Finely chop the cabbage and mince the garlic

2. In a mixer add cabbage, walnuts, minced garlic, olive oil, and salt

3. Blend everything together

4. Add parmesan, and ricotta

5. Transfer mixture to a pan with low heat

6. Add some cooking water

7. In the pot with boiling water add Adoro spaghetti 6 oz

8.Cook till al dente

9. Transfer the pasta to the pan with the sauce

10. Mix, and add some black pepper

11. Serve
