"Chitarre" Caserecci Di Leo are made according to the Italian wire cutting technique. The dough is poured into the mold, just as it would be with a pastry syringe, and then cut from a steel wire. This gives the biscuit greater porosity and roughness and therefore a better ability to soak without breaking. A very popular feature in Italian breakfast biscuits.
