Fried zucchini sticks with beer and Parmesan  

A little East and a little West. From the East, we have resumed the use of very cold liquid and light tempura batter, however beer and Parmesan are definitely more western. In the end, we will have light and crunchy sticks, just like the kind that one pulls the other

Ingredients for Fried zucchini sticks with beer and Parmesan

Preparation

  1. Cut the courgettes in two lengthwise, discard the central pulp and cut sticks in the peel.
  2. Heat the oil for frying.
  3. Mix the flour with the Parmesan, add enough cold beer to obtain a not too thick batter, then dip the sticks one by one in the batter, shake them to eliminate the excess batter and dip them in the boiling oil.
  4. Fry for a few seconds, until the sticks are golden brown, drain and set aside on kitchen paper.
  5. Salt and serve immediately.
  6. Enjoy!
